The Rise of Grazing: Why Sharing Boards Are Thriving

Grazing boards have become a mainstream entertaining solution across celebrations, parties and festive gatherings. A grazing board, which is considered to be an evolution of a traditional charcuterie board, carries much more impact – picture a table centre-piece laden with perfectly poised salamis, prosciuttos and cottos, intertwined with decadent cheeses, breads, honeys and fruits, all displayed at varying heights and levels. It’s a modern day banqueting feast, for the mouth and the eyes!

Industry commentary from IFE highlights that sharing-style food is “having a moment”, driven by consumers seeking more informal, social dining experiences. This shift is echoed by Arthur David, who notes that grazing, mezze and shared plates continue to grow across menus.

The trend is cultural as well as culinary. According to The Yorkshire Press, 71% of consumers believe British dining habits are becoming more Mediterranean-inspired, favouring relaxed, communal eating over traditional plated meals.

Sharing also encourages experimentation. Bidfood reports that:

  • •    68% of consumers are more likely to try new dishes as part of a sharing platter
  • •    60% are more willing to try unfamiliar flavours when dining as a group

This aligns with Mintel findings (via Food Navigator) showing around 70% of consumers actively enjoy food and drink that provide new experiences, with flavour exploration and global influences continuing to grow.

What Customers Want from Christmas Dining

Christmas dining is no longer just about flavour, it’s about experience. Diners want food that feels festive, indulgent and visually exciting. Booker has identified ‘newstalgia’ as a key Christmas 2026 trend, meaning consumers are craving familiar favourites presented in fresh, modern ways. A successful festive grazing board should deliver the comfort and novelty of classic Christmas flavours, but with contemporary twists. A diner’s expectation of a charcuterie board is indulgence, so make sure you are using premium cues with high-quality meats, cheeses and antipasti as well as making your boards look abundant and loaded! This is where Charcuti® excels.

Why Charcuti® Is the Perfect Choice for Operators

Charcuti® offers a premium, ready to serve range designed to help operators build professional, visually impressive boards, with minimal labour and zero specialist skill. The products come in pre-sliced formats to reduce prep time, and in a variety of pack sizes to suit different scale operators so that wastage isn’t an issue. With Charcuti®, you never have to worry about authenticity or quality – every board looks premium, every time. And the range has been designed with versatility in mind, so that you can cater for everything from bar snacks to lunches, to parties and events.

The reason this benefits you and your operation is the opportunity it gives you to increase your margins. The products have a high perceived value, which means you can justify higher price points for the products on your menus. You are also able to increase the spend per table, with sharing boards that encourage add-ons, supplementary charges for the most premium products, and a surcharge for extra sides and antipasti. You can even offer a build your own board for those who want something truly luxurious for Christmas, to maximise on diner spend. And the versatility of the range means that you can use the products on multiple menu applications, across festive menus but also buffets, events and corporate catering.

Charcuti® helps operators deliver festive boards that feel indulgent, look impressive and are simple to execute during the busiest trading period of the year.

How to Build the Perfect Festive Grazing Board

A winning board balances flavour, texture, colour and height. Use this simple structure to create a standout festive centrepiece.

1. Start with premium cured meats

Variety here is key. We would suggest starting with the new Charcuti® Truffle Salami made with real Black Summer Truffle, the perfect decadent addition to any festive menu and one that allows you to charge a premium. We’d then balance that out with some Charcuti® Salami Napoli for earthy, peppery notes, some Charcuti® Prosciutto Crudo for a hit of salty umami with a naturally sweet finish, Charcuti® Mortadella for a creamy and savoury flavour profile, and finally some Charcuti® Bresaola for notes of mineral earthiness and aromatics. These provide the savoury backbone and premium cues your customers expect, and are well balanced in variety.

2. Add artisan cheeses

When building your cheese selection, it’s important to cover a variety to add layers of flavour and texture to balance out the meats. You want at least one soft cheese, like a brie or a camembert, and for a festive grazing board you could upgrade to a baked camembert stuffed with garlic cloves and rosemary sprigs to really elevate it! You also want some hard cheeses, like a classic extra mature cheddar and a Manchego to make it more authentically Mediterranean, and you can’t build a grazing board without a blue! Try a classic stilton for festive vibes, or gorgonzola to add richness and saltiness.

3. Build out with authentic antipasti

Antipasti elements not only add a traditional Mediterranean touch, but they also add textural variety, acidity to cut the fattiness of the meats, as well as balancing the cost of the serve. Start with Charcuti® Italian Olives, available whole for a more premium feel or pitted for extra convenience. Made with a luxurious mix of Sant’Agostino, Nocellara, Leccino and Baresana olivies, these always wow and come in resealable tubs for easy storage and minimal wastage. Next you’ll want to add the Charcuti® Grilled and Quartered Artichoke Hearts for a sweet and nutty flavour, and the Charcuti® Mixed Vegetable Antipasto for acidity and earthiness. For a bit of zing and natural sweetness, you could add SunBlush® Slow Roasted Tomato Wedges, or some Chefs Brigade® Whole Fire Roasted Red Peppers. And finally, for salty richness you don’t want to miss the new Charcuti® Italian Pesto Verde and Pesto Rosso

4. Include crackers, breads and carriers

You want a mixture of crackers and breads to add crunch, as well as acting as a neutral base to carry the flavours of the grazing board and stop the experience from feeling too one-dimensional. We suggest a selection of rosemary crackers, sourdough crostini and pillowy focaccia to soak up those oils and dips. Why not create a loaded festive focaccia slice to add real decadence!

5. Add chutneys and festive accompaniments

Time to add some depth with sweet and spicy notes. Alongside the traditional olive oil with Balsamic vinegar, why not add some Roquito® Hot Honey for a touch of sweet heat that really brings the cheese to life. And make the board feel more festive with winter touches like cranberry chutney, fig relish and spiced nuts for crunch.

6. Finish with seasonal garnishes

For the final flourishes, garnish your board with dried orange wheels, rosemary sprigs and juicy grapes

7. Presentation

The whole point of these grazing boards is that they look almost too good to eat! Try arranging your ingredients in clusters, to create a fuller look on the board. You can also play with height by using bowls, ramekins and stacked items to display different elements at different elevations. You are aiming for a full-looking, abundant board – don’t leave any gaps! And if you want to make it look fancy with minimal effort, try using a wine glass to layer your salami rounds onto the rim, overlapping each one as you go until you have completed the circle. When you take it off and flip it upside down, you’ll have a beautiful salami rose!

The Festive Opportunity for Operators

Christmas is one of the biggest group booking periods of the year. Charcuterie and grazing boards work brilliantly as starters for group dining, shared platters on festive menus, bar snacks paired with seasonal drinks, corporate event catering and premium buffet centrepieces. They deliver on flavour, presentation and value, while keeping back of house operations simple.

With demand for shareable dining experiences continuing to rise, festive charcuterie boards offer operators a powerful way to elevate Christmas menus and maximise on your profits. Charcuti® provides the perfect combination of premium ingredients, eye catching presentation, and operational convenience, helping operators deliver memorable festive occasions while driving value throughout the busiest season in food.
