Method

    Ovenbake the wedges for 15-18 minutes, or deep fry for 4-5 mins

    Cut the chorizo & red onion into wedges & fry off together until the chorizo is cooked through

  3. 3

    Re-heat the tomato sauce in a pan, or in a microwave

  4. 4

    Fry the egg in a little shallow oil until the white is fully cooked & the yolk is still slightly soft

  5. 5

    Stir the chorizo through the potato & pour into a dish

  6. 6

    Top with the tomato sauce & the fried egg

  7. 7

    Garnish with some chopped parsley
