Method

    Defrost the spinach overnight in a refrigerator. Drain well

    Cook the pasta in boiling salted water until just cooked. Drain well

    Slice the mushroom & sweat off in a little butter, then add the white wine & reduce a little

    Stir in the spinach & the cream, bring to the boil & simmer for 2-3 mins. Season to taste

    Serve in a pasta bowl with shaved parmesan
