Method

    Trim & remove the rind from the belly pork

    Season well & place in a roasting tray with a little water. Cover with foil & seal well all round

  3. 3

    Put a weighted tray on top to flatten the pork. Place in a pre-heated oven at 150C for 3-4 hours.

    Remove from the oven & leave to cool

    Cut the pork into 1-2cm squares

  6. 6

    Toss the required amount of squares in half the jerk sauce & roast in the oven for 8-10 mins, until piping hot

  7. 7

    Serve with an extra pot of the jerk sauce
