Method

    Defrost the fish overnight in a refrigerator

    Peel & dice the potato. Cook in boiling salted water until soft. Drain well & leave to dry for 5 mins

  3. 3

    Mash the potatoes with half the butter, add a splash of milk if required. Season to taste

  4. 4

    Slice & wash the leeks, sweat off in the remaining butter until just soft

  5. 5

    Dice the fish into chunks, place in a mixing bowl & season.

    Gently stir in the white wine sauce & the leeks, spoon into an ovenproof dish

  7. 7

    Spoon the potato on top, ripple with a fork to create a pattern

  8. 8

    Bake in a hot oven for minimum 25 mins, until the filling is boiling & the potato has browned on top

    Cook the peas in boiling salted water for 2-3 mins. Drain well

  10. 10

    Serve the pie with the peas
